Can i bake with expired sour cream?

it expired about 11 days ago.


it had some water on the top but i mixed it up, it is creamy (not curdled), smells fine (well, as fine as sour cream could ever smell), and has no mold in it.





i have no desire to eat it because i don't want to get sick, but would baking with it be okay?Can i bake with expired sour cream?
I would. After all, the oven will get up to what? About 375F? The high temperature would kill any bad things in sour cream, and sour cream is just a form of soured milk anyway. If there's no mold, no clumpy curds and no weird smell, it's fine to bake with. The acid in buttermilk and sour cream contains acids which tenderize the gluten in the recipe, producing a fine crumb. Sour cream and cream cheese add richness to a recipe, which makes them super moist and almost springy.

There is a difference between the sell by date and the use by date. That's usually a week to 10 days. You'll be fine to use it in baking. After all, it's already sour, and it looks ok. And I'm the most conservative person about these things, but I know baking.
no. if it's bad it's bad. period. don't use it. it might not make you as sick as if you just ate it outright, but it will definitely harm your recipe.
When it truly goes bad it gets moldy. I just pour the liquid off and keep using it.
