You should really use rock salt because table salt just washes
away and rock salt stays put better.
HOMEMADE VANILLA ICE CREAM
4 eggs
1 box vanilla Junket ice cream mix
1 can Eagle Brand sweetened condensed milk
1 c. sugar
1 tbsp. vanilla
1/4 tsp. salt
1/2 gallon whole milk
For 5-quart ice cream freezer. Beat eggs. Add sugar and mix well. Add Junket, canned milk and vanilla and mix again. Add salt and stir in well. Pour mixture into freezer can of ice cream freezer. Add whole milk to fill line.
Attach dasher and lid; fill outer container with ice and rock salt. Plug in (if you have the electric kind) or hand crank. When it's impossible to turn, it is done.How Do You Make Ice Cream?
Caramel Nut Topping
Ingredients:
* 1 C. light brown sugar
* 1/2 C. white corn syrup
* 1 C. thick sweet cream
* 1/2 C. white sugar
* 1/4 tsp. salt
1/2 C. chopped nuts
Method
Mix all ingredients except nuts and boil to soft ball stage; stir until boiling then cook without stirring until soft ball stage. Cool mixture and add nuts.
Notes:
Number of servings: 1 pint
Coffee can ice cream
Vanilla ice cream:
1 cup heavy cream
1 cup light cream
1 beaten egg (or use equivalent reconstituted dried)
1/2 cup sugar
1 tsp. vanilla extract
Chocolate Ice Cream
1 cup heavy cream
1 cup light cream
1/2 cup sugar
4 tablespoons cocoa
1/2 tsp. vanilla extract
1/8 tsp. salt
Coffee Ice cream
1 cup heavy cream
1 cup light cream
2 tablespoons instant coffee granules
1/2 cup sugar
1/8 tsp. salt
For all varieties:
In 1 lb. coffee can mix all ingredients. Seal can lid well with duct tape. Put small, sealed can inside larger 3 lb. can. Pack ice and 1 cup salt around small can. Put lid on large can and duct tape closed. Roll back %26amp; forth on a large towel (optional) for 15 minutes. Open large can and dump ice and water. Wipe small can dry and open. Stir mix, scraping sides of can. Additional ingredients, eg. cookie crumbs, chopped nuts, can be added now. Reseal small can and place back in larger can. Repack with salt and ice. Continue rolling for 10 minutes more. Open large can and dump ice and water. Wipe small can dry and open. Enjoy!

First, let's start out with an easy vanilla ice cream:
4 eggs
2 cups white sugar
2 (12-ounce) cans evaporated milk
1 (14-ounce) can sweetened condensed milk
1 tablespoon pure vanilla extract
Whole milk
With an electric mixer, cream eggs and sugar. Add evaporated milk, condensed milk, and vanilla. Beat well. Pour into an electric ice cream churn. Add whole milk to fill line. Insert dasher. Pack cooler 1/3 full with ice. Add a layer of rock salt. Repeat layering with ice and salt until full. Note: be careful not to overfill, spilling salt into the churn. When machine starts to labor or shut off, remove the dasher and drain water. Fill with more ice and salt. Cover with a towel and let harden.
* For fruit ice cream such as strawberry or peach: 2 cups sliced fresh fruit covered with 1 cup sugar. Add to mixture before whole milk, and mix well.
Note: For those concerned about raw eggs, pasteurized liquid eggs may be substituted.\
Next, let's try an easy homemade cookie ice cream:
3 egg yolks*
1 (14-ounce) can condensed milk
4 teaspoons vanilla extract
1 cup chocolate sandwich cookies, coarsely crushed
2 cups heavy cream, whipped
In a large bowl, beat the egg yolks and stir in the condensed milk and vanilla. Fold in the crushed cookies and whipped cream. Pour mixture into a 9 by 5-inch loaf pan lined with foil. Cover and freeze for 6 hours or until firm.
To serve, scoop ice cream from pan or cut into slices.
This ice cream is one that you can only make in the winter, but it is easy and only uses a few ingredients. It is called snow ice cream:
8 cups snow, or shaved ice
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
Place snow or shaved ice into a large bowl. Pour condensed milk over and add vanilla. Mix to combine. Serve immediately in bowls.
Lastly, this is a butter pecan ice cream:
1 stick unsalted butter
2/3 cup chopped pecans
1 (14-ounce) can evaporated milk
1 (3 3/4-ounce) package instant French vanilla pudding mix
1/2 cup sugar
1 teaspoon vanilla extract
3 cups whole milk
Melt the butter in a small saucepan. Over low heat, cook the pecans until they are lightly browned, about 3 minutes. Place on a paper towel to drain and cool. In an 8-cup measuring cup with a spout, combine the remaining ingredients. Whisk until the sugar is dissolved. Pour the mixture into an ice cream maker and freeze according to manufacturers' instructions. Add the pecans 10 minutes into the freezing.

There are hundreds of recipes for making ice cream. French ice cream recipes include eggs and taste the richest. If your ice cream maker calls for rock salt, you have to use that, not table salty. However, my ice cream maker is electric and uses no salt. You can buy similar ones quite inexpensively, so check it out.
